Seuls les vins provenant de vignes de plus de vingt ans porteront le nom de Château Cos dEstournel. La vendange est bien sûr elle aussi manuelle et cest à la main que les raisins, recueillis dans des cagettes spéciales, seront rigoureusement triés.
